    For our next residency we welcome back

    Diamantis Kalogiannidis, whose modern Greek

    menu takes you on a journey. Using produce that

    showcases the flavours of his homeland, and

    techniques and details that reflect his

    background in Michelin-starred kitchens.

    Starting his career in his native Greece,

    Diamantis spent 6 years in small luxury hotels

    and restaurants before completing stages at

    Copenhagen's Michelin-starred Relae and

    Kokkeriet.

    Since moving to London he has continued

    to hone his craft in fine dining restaurants, most

    notably as Sous chef at Da Terra.

    In recent months Diamantis has concentrated

    on carving out his own niche, through pop-ups

    and residencies in London and Paris.
